Mediterranean Slow Cooker Potatoes
Ingredients
- 2 lbs Fingerling Potatoes
- 1 cup White Onion - Diced
- 2 Tbsp Olive Oil
- 2 Tbsp Butter - Grass Fed - Melted
- 4 Cloves Garlic - Minced
- 1 Tbsp Oregano
- 1 Tbsp Smoked Paprika
- 1 Tbsp Ground Black Pepper
- Fresh Chopped Parsley
- 1 Lemon -Squeezed
Instructions
- Wash and slice potatoes into halves
- Dice Onions
- Combine Olive Oil, Butter, Garlic, Oregano, Smoked Paprika, Black Pepper, Lemon Juice, whisk together to make sauce
- Spray slow cooker with olive oil
- Add potatoes, onions and sauce to slow cooker. Stir to mix ingredients.Sprinkle parsley on top of mixture.
- Cook on low for 4 to 5 hours
- Stir and enjoy
