Delicious healthy recipes are my favorite recipes. Pull out your slow cooker and make this easy dish for your next dinner.
Mediterranean Slow Cooker Potatoes
- 2 lbs Fingerling Potatoes
- 1 cup White Onion – Diced
- 2 Tbsp Olive Oil
- 2 Tbsp Butter – Grass Fed – Melted
- 4 Cloves Garlic – Minced
- 1 Tbsp Oregano
- 1 Tbsp Smoked Paprika
- 1 Tbsp Ground Black Pepper
- Fresh Chopped Parsley
- 1 Lemon -Squeezed
Wash and slice potatoes into halves
Combine Olive Oil, Butter, Garlic, Oregano, Smoked Paprika, Black Pepper, Lemon Juice, whisk together to make sauce
Spray slow cooker with olive oil
Add potatoes, onions and sauce to slow cooker. Stir to mix ingredients.
Sprinkle parsley on top of mixture.
Cook on low for 4 to 5 hours
Stir and enjoy
