Mediterranean Slow Cooker Potatoes

Mediterranean Slow Cooker Potatoes

Ingredients

  • 2 lbs Fingerling Potatoes
  • 1 cup White Onion - Diced
  • 2 Tbsp Olive Oil
  • 2 Tbsp Butter - Grass Fed - Melted
  • 4 Cloves Garlic - Minced
  • 1 Tbsp Oregano
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Ground Black Pepper
  • Fresh Chopped Parsley
  • 1 Lemon -Squeezed

Instructions

  • Wash and slice potatoes into halves
  • Dice Onions
  • Combine Olive Oil, Butter, Garlic, Oregano, Smoked Paprika, Black Pepper, Lemon Juice, whisk together to make sauce
  • Spray slow cooker with olive oil
  • Add potatoes, onions and sauce to slow cooker. Stir to mix ingredients.
    Sprinkle parsley on top of mixture.
  • Cook on low for 4 to 5 hours
  • Stir and enjoy
