Roasted Pumpkin with Apples

 

It’s Thanksgiving week and this is typically my last week of pumpkins. They seem to disappear from the Farmers Market after this week.

Not to let the pumpkin season end too soon, I tried a new recipe I discovered this month.

 

A few weeks ago, we attended a Revolutionary War Reenactment where campsites were set up showing authentic living conditions during the war. One campsite was roasting a pumpkin in their cooking fire pit. I inquired and was given a new pumpkin recipe – YAY!

Not to keep it to myself, let me share this easy recipe with you. No, it does not require roasting all day in a fire pit, but you could. I used my oven and was pleased that it roasted within 2 hours.

 

You’ll use a small pie pumpkin for this recipe and your favorite cooking apples. The sweeter apples will work well. 

 

Roasted Pumpkin with Apples

 

Cut the top out of the pumpkin – the stem section. Cut a circle in the top of the pumpkin and lift the section from the pumpkin and set aside. Scoop out all of the seeds – you can keep the seeds to roast later. 

Wash, core and chop your apples. How many apples to use will depend on the size of your pumpkin. I used 3 medium sized apples for this pumpkin. 

I tossed the apples with brown sugar and cinnamon and then filled the pumpkin with the apples.

 

Once the apples were in the pumpkin, I wiped the pumpkin off and placed the center top section back on the pumpkin to close before roasting. I placed the pumpkin in a shallow baking dish and placed it in the oven to roast. 

 

 

I wasn’t sure how long to roast the pumpkin, so I checked after one and half hours and it was ready for the table. YAY 🙂

I served this as our vegetable for dinner and everyone enjoyed this new dish. I sliced the pumpkin into wedges and topped each wedge with the apples.

Roasted Pumpkin with Apples

An easy apple stuffed pumpkin side dish.

Ingredients

  • 1 Med Pie Pumpkin
  • 3 or 4 Med Cooking Apples: Fuji/Gala/McIntosh
  • 1/2 cup Brown Sugar
  • 1 Tbsp Cinnamon

Instructions

  • Preheat oven to 400 degrees
  • Wash outside of pumpkin and cut center top section, in the shape of a circle, from pumpkin (stem area) and set aside.
  • Scoop out pumpkin seeds from inside pumpkin. You can save the seeds to clean and roast later. 
  • Core and chop apples
  • Mix brown sugar and cinnamon together
  • Toss apples with the brown sugar mixture
  • Fill the pumpkin cavity with the apple mixture
  • Place the top section back on the pumpkin to close the pumpkin
  • Place pumpkin in a shallow baking dish and place in oven 
  • Bake for an hour and 30 minutes. Pumpkin will be ready when it is fork tender. 
  • Slice pumpkin into wedges and scoop the apple mixture onto each wedge and serve.
