Grilled Artichoke Pasta Salad

Easy summer salad

  • 1 lb Pasta – Any short Pasta
  • 6 oz Black Olive Slices
  • 1/2 cup Cucumber – Diced
  • 1/2 cup Cherry Tomatoes – Halved
  • 12 oz Roasted Red Pepper
  • 12 oz Grilled Artichoke Hearts
  • 1/4 onion Red Onion – Thinly Sliced
  • 1/2 cup Spinach -Fresh Organic – Chopped
  • 1/2 cup Olive Oil
  • 1/3 cup White Balsamic Vinegar
  • 2 tsp Garlic – Minced
  1. Cook pasta according to package directions.

    Drain

    Rinse with cold water

  2. Sauce:

    Whisk together the

    Olive oil, white balsamic vinegar and minced garlic

  3. Toss all ingredients together

  4. Serve and enjoy
