Grilled Artichoke Pasta Salad

  • 1 lb Pasta - Any short Pasta
  • 6 oz Black Olive Slices
  • 1/2 cup Cucumber - Diced
  • 1/2 cup Cherry Tomatoes - Halved
  • 12 oz Roasted Red Pepper
  • 12 oz Grilled Artichoke Hearts
  • 1/4 onion Red Onion - Thinly Sliced
  • 1/2 cup Spinach -Fresh Organic - Chopped
  • 1/2 cup Olive Oil
  • 1/3 cup White Balsamic Vinegar
  • 2 tsp Garlic - Minced


  • Cook pasta according to package directions.
    Rinse with cold water
  • Sauce:
    Whisk together the
    Olive oil, white balsamic vinegar and minced garlic
  • Toss all ingredients together
  • Serve and enjoy
