I’ve been trying different ways to stuff sweet potatoes and wanted to share this fall favorite. Autumn Stuffed Sweet Potatoes Ingredients:2 Sweet Potatoes1/2 Tablespoon Olive Oil1/4 Cup Diced Yellow Onion1/3 Cup Diced Mushroom2 Tablespoon Dried Cranberries1/2 Teaspoon Ground Cinnamon1/2 Teaspoon Cashews1 Teaspoon Real Maple Syrup1 Teaspoon Poultry SeasoningInstructions:Oven: 400°F / 204°C Place washed sweet potatoes on baking sheet, place in pre-heated oven and bake for 1 hour. Once cooled, carefully slice potatoes down the center.Scoop out most of the potato, place in mixing bowl and mash with a fork. Let the mashed potato cool. Once cooled, add remaining ingredients to the bowl and stir together. Carefully stuff the potatoes with the mixture. Place potatoes in oven and bake for additional 10 minutes. Serve with a delicious autumn salad for a complete meal and enjoy.
