Sweet Potatoes are a seasonal favorite in our home. I’ve been trying different ways to stuff sweet potatoes and wanted to share this fall favorite.
Autumn Stuffed Sweet Potatoes
- 2 Sweet Potatoes
- 1/2 Tablespoon Olive Oil
- 1/4 Cup Diced Yellow Onion
- 1/3 Cup Diced Mushroom
- 2 Tablespoon Dried Cranberries
- 1/2 Teaspoon Ground Cinnamon
- 1/2 Teaspoon Cashews
- 1 Teaspoon Real Maple Syrup
- 1 Teaspoon Poultry Seasoning
Oven: 400°F / 204°C
Place washed sweet potatoes on baking sheet, place in pre-heated oven and bake for 1 hour.
Once cooled, carefully slice potatoes down the center.
Scoop out most of the potato, place in mixing bowl and mash with a fork. Let the mashed potato cool.
Once cooled, add remaining ingredients to the bowl and stir together.
Carefully stuff the potatoes with the mixture.
Place potatoes in oven and bake for additional 10 minutes.
Serve with a delicious autumn salad for a complete meal and enjoy.
